Memorial Service for Bruce and Diana Baldi

Instead of flowers, we request that donations be made to any of the organizations or causes Bruce and Diana were passionate about.
Sponge cake recipe.
If you enjoyed the sponge cake Brooke made and served at the memorial, here's the recipe. It had been submitted to Diana's family's cookbook by Giacinta Bonfini, Diana's grandmother.
2 cups flour
1.5 cups sugar
Pinch salt
3 tsp. baking powder
1/2 cup plus 3 Tbsp. water
1/2 cup oil
7 eggs, separated
2 tsp. lemon extract
1/2 tsp. cream of tartar
Mix together flour, sugar, salt, and baking powder. Make a hole in mixture and place water, oil, egg yolks and lemon extract in. Mix thoroughly. Beat egg whites until stiff; add cream of tartar. Fold into other mixture. Pour into ungreased tube pan and bake at 350 degrees F for 1 hour. Invert pan to cool before removing.
